1/2 cup butter 2 tablespoons finely minced onion 1 to 2 garlic cloves, finely minced 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry 1 cup (4-ounces) shredded sharp cheddar cheese 1 cup (4-ounces) shredded mozzarella cheese Salt and freshly ground pepper to taste 1 (16-ounce) whole loaf French bread 1/2 cup freshly grated Parmesan cheese |

1. Melt butter in small skillet or saucepan; add onion and garlic and saute until tender. Remove from heat and stir in spinach, cheddar and mozzarella cheeses, and salt and pepper to taste, mixing well.
