Spinach-Topped French Bread

1/2 cup butter
2 tablespoons finely minced onion
1 to 2 garlic cloves, finely minced
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup (4-ounces) shredded sharp cheddar cheese
1 cup (4-ounces) shredded mozzarella cheese
Salt and freshly ground pepper to taste
1 (16-ounce) whole loaf French bread
1/2 cup freshly grated Parmesan cheese

Spinach-Topped French Bread
Serving size: 8 servings | Calories/serving: N/A
1. Melt butter in small skillet or saucepan; add onion and garlic and saute until tender. Remove from heat and stir in spinach, cheddar and mozzarella cheeses, and salt and pepper to taste, mixing well.
2. Slice the bread in half horizontally. Spread spinach mixture evenly on cut sides of bread; sprinkle with Parmesan cheese. Place each half on an ungreased baking sheet.
3. Bake at 350*F (175*C) for 10 minutes or until cheeses melt.
